Ingredients
320g Sheet ready-rolled puff pastry200g Soft goat's cheese
400g Mixed tomatoes, sliced
1tsp Cornish Sea Salt Smoked Sea Salt Flakes, plus extra to serve
Small handful oregano leaves (or basil)
Instructions
- Preheat oven to 220°C (200°C fan). Unroll the pastry sheet and place on a baking sheet lined with baking paper. Mark a border of 1cm around the edge of the pastry (being careful not to cut all the way down). Spread the goat’s cheese inside the border.
- Arrange the tomatoes on top of the goat’s cheese, overlapping slightly. Sprinkle over the Smoked Sea Salt Flakes. Bake in the oven for 25-30 minutes until the pastry is puffed and golden, and the tomatoes cooked.
- Sprinkle with extra Smoked Sea Salt Flakes and oregano leaves to serve.
