Southern Yam Salad

Southern Yam Salad

Ingredients

2 yams or sweet potatoes, finely diced
100g kale, roughly chopped
75g chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp roasting salt
pinch of cumin seeds

Instructions

Preheat your oven to 180˚C and place all your vegetables into a silicone-lined baking tray.

Bake for 20 minutes, tossing the mixture halfway through.

Serve warm, seasoned with a generous pinch of Roasting Salt.
