Smoked Salmon and Scrambled Egg on Toasted Farmhouse Loaf

Ingredients

A small wedge of butter

4 eggs

Cornish Sea Salt and Luxury Pepper
100g smoked salmon

1 lemon, cut into wedges

Instructions

  • Melt the butter in a small frying pan over a moderate heat until it's foaming. In the meantime, whisk the eggs in a bowl and season with Cornish Sea Salt and Luxury Pepper.
  • Cut four medium slices of your farmhouse loaf and put them under the grill to lightly toast on both sides.
  • Add the eggs to the pan, stirring occasionally with a wooden spoon or spatula, and cook until just before you think it’s perfect – the egg continues to cook when the heat is turned off so under cook them slightly and leave them in the pan while you butter your toasted loaf.
  • Serve the eggs on top of the toasted loaf, with slices of smoked salmon over the top. Add a good pinch of Cornish Sea Salt and Luxury Pepper along with a wedge of lemon.

Garnish with coriander
